Ground nut yogurt

I am able to make very nice, thick ground nut milk yogurt at home. For this we need to soak ground nuts for about 8 hours in water. After this, throw away the water used for soaking. Now take fresh water. For a fist full of ground nuts, about a glass of water (300ml) is sufficient. Now, use the electric mixture to make milk. Strain it. Boil this milk while stirring often for about 5 to 6 minutes. Cool almost. Use the yogurt starter. Thick yogurt will be ready in 6 to 12 hours depending on the climatic conditions.
This yogurt can be used for making tasty curd rice, buttermilk, curry ( Kadhi) or raita or salad dressing. I also use it for fermentation of Dhokla or Handvo. You can also use it in making dough for Parathas or Naan for softer outcome.

  2. You need about a half table spoon of yogurt starter. Take an empty bowl, add the starter. Spread the starter all around on the inner side of the bowl evenly, like a thin layer. The excess of the starter can be used to mix with the milk. Milk should be just warm. In India, yogurt can be ready in 4 to 6 hours also. For starter, you can take some from me or use the dairy yogurt starter first time only. Initially, upto 4 or 5 times yogurt batches may not be thick as mine, but then it will be always. If you take my yogurt as starter, may be you cut down this time. You can use this starter now for any yogurt, either soy or ground nut milk.If you are out of town, you can store it in deep freeze compartment for few days. Then use again when it is room temparature.
